LA’s Newest Steakhouse Is Cooking Massive Dry-Aged Steaks Over Open Fire

In times of the pandemic, having an amazing terrace is a godsend for a restaurant. Chef Brendan Collins and business partner Michael Greco, however, had an unusual problem: Even before the arrival of Covid-19, their terrace at Fia, which opened in Santa Monica, California in 2019, was a bit too inviting. "It was always very difficult for us to place the inside," says Collins.
When the California indoor eatery reopened fully, the same problem persisted - everyone wanted to dine on the quaint terrace - so the duo decided to make a change. Collins and Greco would turn a restaurant into two different places. Fia, which is a mix of Italian coastal and Californian cuisine, would continue as an al fresco restaurant. And the dining room would transform into an intimate, 48-seat Italian-inspired steakhouse called Fia Steak, which opens tonight.

The menu is based on the steaks that Collins ages in-house, like the Costata di Manzo, a 60 day ripened premium boneless ribeye, the Bistecca di Controfiletto which is 16 ounces. 45 day aged New York Strip and the Big Boy Porterhouse, a 50-oz. Bistecca alla Fiorentina matured for 45 days. You won't see this on the menu, but those who know can order it for $ 350. Whichever cut you choose, Collins chose to cook them over an open flame.

"I love the taste of cooking meat over the grill," says Collins. "It's so original and so ancient - why do you want to prepare it differently?"
Well, in order to cook over the fire, they first needed a grill. Collins and Greco, together with Adam Picker from Morpheus Design, created a kitchen space where there was none before. They blocked two French doors and put dry refrigerators in their place. Then they removed the existing fireplace, put in Santa Maria grills, and also installed a large antique butcher's block as an island separating the new kitchen from the dining room.
On these large grills and in the dry agers, Collins goes beyond just steak. He also plays around with aging lamb and fish. He also matures pork shoulder dry and serves it with apple and fennel pollen, grills Maine lobster and the English chef with French culinary training knew early on that he wanted Dover sole on the menu. "It's such an elegant fish and the way it's cooked over the fire makes the skin crispy, but then it's still so tender when it comes off the bone," says Collins of the dish he served with béarnaise and grilled lemon served.

He'll also offer giant seafood platters, caviar bumps, and meat grinders, which will allow Collins' team to prepare steak tartare right in front of guests. "We wanted to make sure we were doing things at the table because we wanted people to feel part of the restaurant," says Collins. "It was about making it interactive and intimate."
While testing the restaurant before it opened, Collins saw how engaging diners in the food - like how people can go to the dry ager and choose their style with the chefs - got people moving and generating energy in the room . It reminded him more of throwing a house party than running a restaurant. And that is exactly what Collins and Greco are aiming for. Fia Steak should be a fun night out, so they serve food and run a service that fosters that atmosphere. This is not a contemplative Nordic tasting menu restaurant that they created.
"Time is precious and you want to make sure that you are using your time and hard-earned money on a good time," says Collins. "I don't want to be challenged, I want to enjoy my food and enjoy the show."
