See Inside Thomas Keller’s New Champagne and Caviar Lounge in Napa Valley

Napa Valley has a new place to drink - and instead of the region's most notable export (red wine), it focuses on champagne and caviar. The top toque in the region, Thomas Keller, opened the Regiis Ova Caviar & Champagne Lounge in Yountville on June 26th, with which he co-founded the caviar brand Regiis Ova. It should stay open until autumn.
Guests can choose from a champagne and wine list with Dom Pérignon, Krug and Ruinart champagne as well as wines from selected Californian and European winemakers. Michel Couvreux, Beverage Director of Keller’s Per Se and Surf Club Restaurant, and Andrew Adelson, Head Sommelier at The French Laundry, curated the drinks menu. A number of types of caviar are on the menu, and diners can choose from a variety of combinations. The highlights include Daniel Boulud smoked salmon with Meyer lemon Schmear and bagel waffles and Hass avocado toast, a slice of toasted Bouchon Bakery Pain de Campagne with Hass avocado puree, garnished with thinly sliced radish, chopped egg and roasted Sicilian pistachios. Large-format dishes - like ad hoc style buttermilk fried chicken tenders with ranch dressing and French onion dip, served with cauldron fried potato chips - are also offered if diners want to add a meal to their tasting.

“We're introducing something that has never been done in Yountville; We are creating a lively lounge with champagne, caviar and live music where our neighbors, friends and visitors can relax, meet and celebrate together, ”said Keller in a statement.
It comes at an opportune time. "After this difficult year and a half, I find that people are looking for all kinds of social interaction," Keller told T&C about his decision to open the room after a year of lockdown due to the pandemic. “Everything we do here in Yountville expresses a strong desire to be together again, within a community and without the restrictions that were restrictive during COVID. I think people are just excited to be out and about, regardless of experience or format. "
The Napa Valley residents are thrilled. “Regis Ova fills the void for light bites, champagne and classic cocktails in the heart of Napa. It's a surefire hit, ”says entrepreneur and Napa winemaker Trevor Traina, a former US ambassador to Austria. "Thomas has so much faith in the classics that he can combine things like onion dip and chips with caviar and make it amazing."

A rotating squad of musicians from the Bay Area plays jazz piano every night. DJ JP Jones also developed a playlist of soulful melodies from artists such as Grace Jones, Aretha Franklin, Amy Winehouse and Leon Bridges.
Keller's team consulted with designer Ken Fulk for the interior design. The team furnished the room with a selection of RH furniture - including RH Interiors, RH Modern and RH Outdoor - made from materials such as Italian synthetic leather, Belgian linen from Libeco, hand-woven seaweed, gray Marquina marble, hand-forged iron and sustainable teak. "Ken has been a friend for a while," says Keller. "We partnered with him at The French Laundry's 25th anniversary celebration and we thought he would be great to work with on this concept as he has the ultimate eye for the transformation that is needed."
The pop-up is located on 6480 Washington Street in Yountville, CA and is open from 5:00 p.m. Thursday through Saturday. until 11 p.m. and Sunday from 11 a.m. to 7 p.m. Reservations are possible on Resy.
